
Sesame Tofu Zoodles
Ingredients:

1/2 cup peanut butter

1/3 cup sesame oil

1/3 cup low sodium soy sauce

1/4 cup rice vinegar
-
2 tsp Sriracha sauce
-
1/4 tsp ground ginger
-
12 oz extra firm tofu - make sure it is pressed, find out how here

4 zuchinni, spiralized
-
1/4 cup Green onions, chopped
-
Sesame seeds - I used everything but the bagel seasoning
Directions:

Mix together the peanut butter, sesame oil, soy sauce, vinegar, Sriracha, and ginger. *I used an immersion blended to mix my sauce.

Cut tofu into 1 inch cubes. Heat 1 Tbs of olive oil to a medium skillet on medium high heat.

Add tofu to the skillet and cook until golden brown. Add 1/2 cup of the peanut sauce to the skillet. Stir to combine.

Continue to cook the sauce and tofu until most of the liquid in the sauce is gone and the tofu is browned.

Warm zoodles in the microwave for about 30 seconds. Divide out into 4 servings and top with tofu, ~1/4 cup of peanut sauce, sesame seeds, and green onions.
