Happy fall everyone! As you may know Saturday was the official first day of fall. This is probably my favorite season because it is the only one that has activities, decorations, and specialty beverages dedicated to the season rather than a holiday in the season. Not only that, but there's just something about the crispness in the air that just makes you smile. With every season comes special seasonal produce. I personally have been trying to get better at eating produce that is in season. It is usually cheaper to do this and it also helps me to add a variety of fruits and vegetables to my diet throughout the year. It also encourages me to try some produce that I may not normally try.
Some produce that you will likely see more of with the change to the fall season are:
Greens - kale, swiss chard, turnip greens, etc.
I decided to try out some fall produce in the form of a salad. Salads are not only for summer time and cozy warm comfort food is not only for fall. You can eat salads any time of the year, and you should especially while so many tasty fruits and vegetables are in season this fall. Salads don't always have to be spinach, berries, and cheese. Try varying things up this fall by incorporating greens (such as kale), apples, and grapes from our fall produce list to make a flavorful and nutritious meal or side dish.
1 small apple sliced into thin slices
1/2 cup grapes, halved
8 cups of greens
1/2 cup cooked quinoa
2 cups cooked chicken, sliced
Sunflower seeds sprinkled on as desired
Balsamic vinaigrette to taste
Assemble each salad with 2 cups of greens for the base and top with 1/4 of apple slices, 1/8 cup grapes, 1/8 cup quinoa, 1/2 cup chicken. Top with sunflower seeds and vinaigrette and enjoy!
