Peanut Butter and Banana Yogurt Bark


  • 2 cups of plain Greek yogurt

  • 1/2 cup peanut butter

  • 2 bananas

  • 1-2 tsp liquid Stevia (another sweetener can be used)

  • 1/2 tsp vanilla extract

  • Dark chocolate chips

  • Shredded coconut


  1. Slice one of the bananas into thin to medium slices and set aside.

  2. ​Add the yogurt, peanut butter, the other banana, sweetener, and vanilla into a food processor. Blend until smooth.

  3. Line a rimmed baking sheet with parchment paper. Pour half of the yogurt mixture onto the baking sheet. 

  4. Randomly place banana slices on top of mixture. 

  5. Pour remaining yogurt mixture onto baking sheet. Make sure all of the bananas are covered and the yogurt is evenly distributed.

  6. Sprinkle the top with chocolate chips and coconut flakes.

  7. Cover with foil or plastic wrap and place in freezer over night.

  8. In the morning, break apart yogurt sheet into pieces of various sizes and enjoy!

This makes a great snack or dessert!
