Greek Meatballs

Ingredients:

  • 1 lb ground turkey

  • 1/2 red onion, chopped

  • 1/2 cup bread crumbs

  • 1 egg

  • 1/2 cup feta cheese

  • 1 Tbs olive oil

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • Tzatziki sauce

Directions:

  1. Preheat oven to 425 degrees F. In a large mixing bowl, mix everything but the tzatziki sauce together until combined. 

  2. Form meat mixture into balls and put on skewer. Place about 4 meatballs on each skewer. *NOTE: If using wooden skewers, make sure to soak in water 15-20 minutes before using.

  3. Bake for 20-30 minutes, or until meatballs reach 165 degrees F. 

  4. Serve topped with tzatziki sauce.

*This recipe is great served with a side of green beans and roasted sweet potatoes!
