
Chopped Asian Salad with
Peanut Dressing
Ingredients:
For the salad:

1 cup of match stick carrots

1 red bell pepper, thinly sliced

1/2 red cabbage, thinly sliced

2 cups chopped kale
-
2 green onions
-
1/2 cup cilantro, chopped

Cashews
For the dressing:
-
1/2 cup peanut butter
-
1/4 cup soy sauce
-
1/3 cup rice vinegar
-
1/4 cup sesame oil
-
1/2 tsp garlic powder
-
1 Tbs lime juice
-
Red pepper flakes as desired
Directions:

Chop vegetables and mix together in a large bowl.

In a small bowl, add the dressing ingredients. Stir until combined.

Serve salad and top with cashews and dressing.
