Chopped Asian Salad with

Peanut Dressing

 

Ingredients:

For the salad:

  • 1 cup of match stick carrots

  • 1 red bell pepper, thinly sliced

  • 1/2 red cabbage, thinly sliced

  • 2 cups chopped kale

  • 2 green onions

  • 1/2 cup cilantro, chopped

  • Cashews

For the dressing:​

  • 1/2 cup peanut butter

  • 1/4 cup soy sauce

  • 1/3 cup rice vinegar

  • 1/4 cup sesame oil

  • 1/2 tsp garlic powder

  • 1 Tbs lime juice

  • Red pepper flakes as desired

Directions:

  1. Chop vegetables and mix together in a large bowl.

  2. In a small bowl, add the dressing ingredients. Stir until combined.

  3. Serve salad and top with cashews and dressing.

Makes about 8 servings.
