Chicken Fajitas


  • 3 chicken breasts, cut into thin strips

  • 1 green bell pepper, cut into thin strips

  • 1 medium onion, cut into thin strips

  • 1 Tbs olive oil

  • 1/2 Tbs chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

  • 1/2 tsp cayenne

  • 1/2 tsp salt

  • 1/4 tsp pepper

Ingredients for serving:

  • Fajita tortillas

  • No added fat refried beans

  • Guacamole

  • Shredded cheddar cheese

  • Salsa

  • Cilantro


  1. In a large skillet on medium high heat, add olive oil. Place chicken in skillet and add the chili powder, garlic powder, cumin, cayenne, salt, and pepper. Stir together until chicken is coated with the seasoning. 

  2. Once the chicken is done cooking, about 8-10 minutes, add the bell pepper and onion, mix with chicken. Cook until the onions are translucent, about 5 minutes. 

  3. Warm up the tortillas and refried beans. Assemble fajitas in the tortillas with the ingredients for serving.
