Breakfast Bowl


​For Marinated Rice:

  • 2 cups of wild rice blend cooked

  • 1 Tbs soy sauce

  • 1 Tbs water

For Veggie Slaw:​

  • 1/4 cup rice wine vinegar

  • 1 Tbs sugar

  • 1/4 tsp salt

  • 1/2 cup shredded beets

  • 1/4 cup shredded carrots

For Breakfast Bowl:

  • 2 fried eggs

  • 1 cup marinated rice

  • 1/2 cup veggie slaw

  • Sriracha sauce


For Rice Blend:

  1. Mix all rice blend ingredients together in a medium bowl until combined. Set aside. ​

For Veggie Slaw:

  1. Combine rice wine vinegar, sugar, and salt in a sauce pan and bring to a boil.

  2. Place shredded carrots and beets in medium bowl and pour vinegar mixture over carrots. Stir until combined. 

For Breakfast Bowl:

  1. In a pan, fry two eggs to done to desired consistency. 

  2. In a serving bowl, add the rice and veggie slaw. Place fried eggs on top and drizzle with Sriracha sauce.

Nutrition Facts: 450 calories, 12 g fat, 40 g carbs, 4 g fiber, 20 g protein
